Getting ready to carve a pumpkin? Save the seeds!

Halloween is coming up soon which means many will be carving Jack-O-Lanterns.  Save the guts from your creation as pumpkin seeds are very nutritious and tasty!

Pumpkin seeds are rich in proteins and unsaturated fats like omega-6 fatty acids. They also contain other essential vitamins and minerals, such as calcium, folate, iron, vitamin B2, and beta-carotene.

Toasting pumpkin seeds is very, very easy and there are so many ways to spice ’em up. Wash the seeds, dry them, coat in oil or butter, add spice and bake. It’s that easy!

Well, this is weird that it’s Oct 2 & no one has commented on this yet, but I will with a thought: nearly 2 decades ago, one of the most popular break and lunch snacks for kids on my school campus was a pkg. of toasted pumpkin seeds. My students carried them at all times to a point of annoyance (“pith” left behind if encountered/ crumpled packaging….etc)….UNTIL Michelle Obama’s “healthy” school diet took over the country and healthy pumpkin seeds disappeared from the campus. In “her” era, we had routinely filled-to-the-brim 30-gallon trash barrels all over campus with the discarded, distasteful breakfast & lunch offerings. I once purposely bought a breakfast sandwich (knockoff of a McMuffin) to see why kids were throwing away so much food. IT was so awful that I, not a very critical eater, could not swallow more than half of the sawdust dry “muffin” and the tasteless “egg” and “cheese,” which I’m sure were some sort of “reduced fat/calorie” concoction. Don’t know why, for instance, a nice bag of roasted pumpkin seeds sprinkled atop yogurt, could not have been offered? If you have to screw with tasty dishes to “substitute” man-made items to make it more “healthy,” then you’ve already lost the “battle.” Just “go” with what people already like, & present it in a healthy way. Turn a beloved pumpkin seed snack into breakfast or lunch. DAH.
